Service Warriors
people peaking at wait times
crowding the front desk
oval plates thump hard and vibrate
on eye level metal ledge
momentarily basking under heat lamps
then scooped and balanced
on large serving trays
“PICK IT UP”
battalion of waiters march to find allies
bartender and busboys stand ready
culinary maps find places
in a circular spindle
where timing is everything
constant motion to fight hunger
talking over the drone of
a hundred conversations
“ORDERING”
prep chefs slice more vegetables
sauté pans dance on blue flames
squeeze of lemon, dash of wine
steamtable blasts a cloud
three sides of broccoli appear
basket of bread and pats of butter
“COMING THROUGH”
I can hear the maître de say,
“Every farmer with a tractor is here.”
Must be Saturday night.
